Bacon and Cheese Quiche
• 84 g bacon bits
• 80 g chopped onion
• 1 teaspoon of ground sage spice
• 140 g shredded Swiss cheese
• 85 g grated Parmesan cheese
• 1 (9 inch) deep dish frozen pie crust
• 4 eggs, lightly beaten
• 235 ml half-and-half cream

1. Preheat oven to 400 degrees F (200 degrees C).
2. In a medium bowl, mix the bacon, onions, and both cheeses. Place this mixture in the unthawed
pie crust.
3. Mix the eggs and half and half in a bowl. Pour the egg mixture over the cheese mixture.
4. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake
for an additional 35 minutes, until top of quiche begins to turn brown.
Gitchi Oven Quiche No Crust
• 8 eggs
• 1 cup milk
• 2 cups shredded hash brown potatoes
• 1 cup diced cooked ham
• 1 cup shredded Cheddar cheese
• 1 to taste salt and pepper, teaspoon of sage/sweetgrass spice to taste

1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease an 8x8 inch glass baking dish.
2. Beat eggs in a large bowl; stir in the milk. Stir in the potatoes, ham and cheese. Season to taste
and pour into prepared pan.
3. Bake in preheated oven for 45 to 50, until knife inserted in middle comes out clean.
